Christmas Chocolate Muffins

Ingredients
- 2 eggs
- 1 teaspoon vanilla
- ½ cup milk
- 2 tablespoons AbuAuf coconut oil (melted)
- ½ cup molasses
- 1 cup boiled sweet potatoes
- 1 cup AbuAuf almond flour
- 1 cup AbuAuf 100% cocoa
- 1 teaspoon baking powder
- Coconut flour and rosemary (to garnish)
Method
- Preheat oven to 170C. Brush the cupcake tin with oil or add muffin paper.
- Mix wet ingredients with the sweet potato in a bowl. Add dry ingredients (almond flour, cocoa and baking powder) and mix well into a thin dough.
- Divide dough into the tray to make 9 muffins.
- Bake for 20 minutes or until a skewer comes out clean from the middle of the muffin.
- Leave to cool before transferring to serving dish.
- Garnish each with a rosemary sprig and dust with coconut flour to give a snow effect.
